Brownie Base:
- 1.5 cups softened pitted dates
- 1 cup almond flour
- 1/3 cup walnuts
- 1/4 cup cocoa powder
- 1 scoop chocolate protein powder I use Levels
Ice Cream Layer:
- 1.25 cups cottage cheese
- 1 scoop chocolate protein powder
- 3 tbsp cocoa powder
- 3 tbsp maple syrup
Chocolate Coating:
- 1.25 cups dark chocolate chips
- 2 tbsp coconut oil

Prepare the Brownie Base:
- Soften the dates: Soak dates in very hot water for 10 minutes.
- In a high-quality blender or food processor, blend dates, almond flour, walnuts, cocoa powder, and protein powder until a sticky dough forms.
- Press the mixture onto a loaf pan lined with parchment paper, using another sheet of parchment to press it evenly.
Make the Ice Cream Layer:
- In the same blender, blend cottage cheese, chocolate protein powder, cocoa powder, and maple syrup until smooth and creamy.
- Spread this mixture evenly over the brownie base.
- Freeze for 2 hours until firm.
Cut & Coat in Chocolate:
- Remove from the freezer and cut into 18 cubes.
- Melt dark chocolate chips and coconut oil together until smooth.
- Dip each brownie bite into the melted chocolate, then place on parchment paper.
- Let the chocolate set before serving.
