High Protein Ice Cream Brownie Bites

Ingredients
Brownie Base:
- 1.5 cups softened pitted dates
- 1 cup almond flour
- 1/3 cup walnuts
- 1/4 cup cocoa powder
- 1 scoop chocolate protein powder I use Levels
Ice Cream Layer:
- 1.25 cups cottage cheese
- 1 scoop chocolate protein powder
- 3 tbsp cocoa powder
- 3 tbsp maple syrup
Chocolate Coating:
- 1.25 cups dark chocolate chips
- 2 tbsp coconut oil
Prepare the Brownie Base:
Soften the dates: Soak dates in very hot water for 10 minutes.
In a high-quality blender or food processor, blend dates, almond flour, walnuts, cocoa powder, and protein powder until a sticky dough forms.
Press the mixture onto a loaf pan lined with parchment paper, using another sheet of parchment to press it evenly.
Make the Ice Cream Layer:
In the same blender, blend cottage cheese, chocolate protein powder, cocoa powder, and maple syrup until smooth and creamy.
Spread this mixture evenly over the brownie base.
Freeze for 2 hours until firm.
Cut & Coat in Chocolate:
Remove from the freezer and cut into 18 cubes.
Melt dark chocolate chips and coconut oil together until smooth.
Dip each brownie bite into the melted chocolate, then place on parchment paper.
Let the chocolate set before serving.
