These strawberry protein bars are almost too pretty to eat—but they actually taste even better than they look... With incredible macros and a dreamy texture, they taste like cookie dough, birthday cake, cheesecake, and strawberries all in one bite. Sweet, creamy, and irresistible.

Instructions

1. Make the dough base:

  1. 1. In a large mixing bowl, combine:
  2. - 3 scoops protein powder
  3. - 1 cup oat flour
  4. - 3 tbsp softened butter
  5. - 4 tbsp creamer
  6. - 1 tbsp maple syrup
  7. - 2 tbsp Fairlife milk
  8. 2. Mix well until a soft, dough-like texture forms.
  9. 3. Fold in sprinkles, if using.
  10. 4. Line a loaf pan with parchment paper. Press dough evenly into the base.
  11. 5. Freeze for **5–10 minutes** to set.

2. Prepare the creamy topping:

  1. 1. In a blender, add:
  2. - ½ cup cottage cheese
  3. - 2 oz reduced-fat cream cheese
  4. 2. Blend until completely smooth and creamy (scrape sides if needed).

3. Pour into a bowl and mix in:

  1. - 1 scoop protein powder
  2. - 1 tbsp maple syrup
  3. - ½ tsp beet root powder (optional)
  4. - ½ tsp strawberry jello powder
  5. 4. Stir or whisk until fully blended and silky.

3. Assemble and chill:

  1. 1. Pour the topping over the chilled base in the loaf pan.
  2. 2. Use a spatula to spread evenly across the surface.
  3. 3. Freeze for **1 hour+,** or until topping is firm enough to slice.

4. Serve and store:

  1. - Slice into 8 bars.
  2. - Store in the freezer. **Before eating**, let bar thaw at room temp for ~15 minutes for best texture.
