I’m obsessed with this cookie skillet. It’s the perfect blend of cozy and indulgent—like a banana bread-cookie hybrid with melty chocolate and buttery edges. It’s naturally sweetened with ripe banana and made gooey with almond butter, oat flour, and a touch of real butter. You can totally share it with someone… or eat the whole thing yourself. I won’t judge.

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mash the banana and mix in the almond butter.
  3. Melt the butter and pour half into the banana-almond butter mixture.
  4. Add oat flour, vanilla (if using), and salt. Stir to combine.
  5. Fold in chocolate chips.
  6. Pour the batter into a greased 7.5-inch skillet and spread evenly.
  7. Bake for 10–13 minutes, depending on how gooey you like it. (I like mine gooey!)
  8. Remove from the oven and let cool for 5 minutes.
  9. Poke a few holes with a fork, then drizzle the remaining butter over the top.
  10. Top with whipped cream and dig in!
