These homemade no-bake protein bars are a game-changer — they’re made with simple, nourishing ingredients like oats, dates, and peanut butter, with over 10g of protein per bar. They’re soft, chewy, and topped with a layer of rich dark chocolate (because you deserve it). You’ll be hooked after one bite — and your wallet will thank you too!

Soften the dates:

  1. Soak your pitted dates in warm water for 10 minutes, then drain.

Blend the base:

  1. In a food processor, combine softened dates, almond flour, oat flour, protein powder, and peanut butter. Pulse until a dough forms. If it’s too dry or crumbly, add 1–3 tbsp almond milk, one tablespoon at a time, until soft and moldable.

Shape:

  1. Line a loaf pan with parchment paper. Press the dough evenly into the bottom of the pan using a spatula or clean hands.

Make the topping:

  1. In a small microwave-safe bowl, melt dark chocolate chips with coconut oil in 20-second intervals, stirring between each, until smooth.

Assemble:

  1. Pour the melted chocolate over the base and spread evenly. Sprinkle with sea salt if desired.

Freeze:

  1. Place the pan in the freezer for about 20 minutes, or until the topping is set.

Cut and store:

  1. Remove from the freezer, slice into bars, and store in the fridge for up to one week.
